Fresh Black Summer Truffles from Italy
Fresh each week from Italy! Subtler than their winter counterpart, fresh summer truffles are harvested from May through August, depending on the weather and the season. They add to dishes an aroma and flavor that marries well with other ingredients, but are not overpowering and pungent like many winter truffles can be. You can buy our fresh summer truffles online at prices that are much more accessible than those harvested in the winter, which makes them great to experiment with truffle dishes without fear of making (costly) mistakes.

Instructions for use and storage: Don’t cook for long periods of time or over excessive heat. Shave over dishes at the end of the preparation or when plating. The heat from your dish will bring out the aroma and flavor of the truffle. Store in the refrigerator wrapped in a paper towel.

The summer truffle looks similar to a winter black truffle but is not as intensely perfumed. With prominent black scales and firm, white-veined beige flesh, summer truffles have a delicate flavor and a slightly nutty aroma with notes of hazelnut and fresh earth. Tuber Aestivum Vitt. is the scientific name for the Summer Truffle. Since these truffles are also black in color, they are commonly referred to as Black Summer Truffles. The season for this truffle is from May through early September.
Because of its thicker skin, the Summer Truffle lasts longer than both the White and Winter Truffle and if properly kept, it will last for three weeks after harvest. The early fresh summer truffles have a very gentle aroma compare to winter ones. The fresh truffles should be used for finishing or topping off any dish, as any cooking heat may destroy their aroma.

When the fresh truffle season ends (yes, a dark day indeed in kitchens around the world), we’re thankful that there is an alternative to get our truffle fix. Enter preserved truffles. Summer truffles will not be very striking out of the jar, and will need to be heated up or cooked with to bring out the flavors. Best for used in hot dishes like risottos, omelets and mashed potatoes.
The heat of the dish itself will help bring out the aroma. An even more successful way to enhance the dish would be to add as well some truffle oil, butter or truffle paste (oils and butters are usually more aromatic than canned truffles, and can preserve the fragrance of the dish longer).
Preserved truffles are a nice, budget-friendly way to add visual truffle appeal to dishes. They are great to use with truffle oil – the oil will add the flavor, the preserved truffles the truffle “look”, but preserved truffles should be used only to garnish a dish, or in conjunction to truffle butter and oil during those times when fresh truffles are out of season or when the budget doesn’t allow for the real thing. Preserved truffles out of the jar or can have almost no flavor or odor.
