Fresh each week from Italy! Subtler than their winter counterpart, fresh summer truffles are harvested from May through August, depending on the weather and the season. They add to dishes an aroma and flavor that marries well with other ingredients, but are not overpowering and pungent like many winter truffles can be. You can buy our fresh summer truffles online at prices that are much more accessible than those harvested in the winter, which makes them great to experiment with truffle dishes without fear of making (costly) mistakes.

Tuber Aestivum Vitt. is the scientific name for the Summer Truffle. Since these truffles are also black in color, they are commonly referred to as Black Summer Truffles. The season for this truffle is from May through early September.

Because of its thicker skin, the Summer Truffle lasts longer than both the White and Winter Truffle and if properly kept, it will last for three weeks after harvest. The early fresh summer truffles have a very gentle aroma compare to winter ones. The fresh truffles should be used for finishing or topping off any dish, as any cooking heat may destroy their aroma.

Note: Truffles are formed naturally in the ground therefore each truffle may vary slightly in size and color. The size of the product you add to your cart will be the size of the product shipped. You must select the product size you desire in the menu above.

he Black Summer Truffle (Tuber aestivum/unicinatum) thrives in northern Italy, central Europe and the UK but also grows in Turkey and North Africa. It is highly valued for its culinary uses. Summer truffles do not have as strong an aroma or taste as winter truffles do.
They are mainly harvested from June to November . These truffles grow in symbiosis with trees such as oaks, hazels and beech.
Their shape is generally round, up to 4 cm diameter. This truffle had a subtle, mushroom, earthy, nutty flavor. Some say it has a slightly chocolatey sweetness, and a musky smell.
SEASON IS LATE MARCH THROUGH AUGUST
Store wrapped in a paper towel in a sealed container or sealed bag in the refrigerator. If you want to infuse anything with the aroma of your truffles, put whatever it is in a sealed container with the truffles.
White or black paper-thin truffle slices may be inserted into meats, under the skins of roasted fowl, in foie gras preparations, in pâtés, or in stuffings. Some specialty cheeses contain truffles as well.
The flavour of black truffles is far less pungent and more refined than that of white truffles. It is reminiscent of fresh earth and mushrooms, and when fresh, their scent fills a room almost instantly. In 2006, designer Tom Ford released a perfume that lists black truffle as its first note. While in the past chefs used to peel truffles, in modern times most restaurants brush the truffle carefully and shave it or dice it with the skin on so as to use most of this expensive ingredient.
A few restaurants, such as Philippe Rochat in Switzerland, still stamp out circular discs of truffle flesh and use the skins for sauces. Tuber aestivum/unicinatum, Summer Black Truffles, Black Truffles, Buy Truffles, in season truffles, european truffles, truffles, purchase truffles, truffle

Brushed First Choice

When the fresh truffle season ends (yes, a dark day indeed in kitchens around the world), we’re thankful that there is an alternative to get our truffle fix. Enter preserved truffles. Summer truffles will not be very striking out of the jar, and will need to be heated up or cooked with to bring out the flavors. Best for used in hot dishes like risottos, omelets and mashed potatoes.

The heat of the dish itself will help bring out the aroma. An even more successful way to enhance the dish would be to add as well some truffle oil, butter or truffle paste (oils and butters are usually more aromatic than canned truffles, and can preserve the fragrance of the dish longer).

Preserved truffles are a nice, budget-friendly way to add visual truffle appeal to dishes. However, if you are looking to add the pungent aroma and taste of truffles to your dish, we recommend that you explore our fresh truffle selection at https://trufflecarts.com/ Jarred or canned truffles, sold by us or any other vendor, are mere shadows of their fresh truffle selves and will not, by themselves, deliver the aroma or flavor of fresh truffles.

They are great to use with truffle oil – the oil will add the flavor, the preserved truffles the truffle “look”, but preserved truffles should be used only to garnish a dish, or in conjunction to truffle butter and oil during those times when fresh truffles are out of season or when the budget doesn’t allow for the real thing. Preserved truffles out of the jar or can have almost no flavor or odor.

If you are looking for the true flavor of a fresh truffle, then please visit our fresh truffle page and purchase a fresh truffle – we carry the markets best selection of fresh truffles while they are available at unbeatable prices.
