Bagnoli Truffle or Tuber mesentericum vitt. is a Truffle that varies greatly in aroma and flavor based on both terroir and host tree. It is known to be the most pungent of all of the Black Truffles. Our Bagnoli’s are harvested from only choice soils and trees in Italy, making them some of the finest in the world.
These Truffles have an aroma similar to Perigord with occasional licorice-like or carbolic undertones that dissipate with heat, leaving an exquisite aroma and flavor. You will find these to be a more affordable substitute for the Black Diamond. This product arrives in the country on Tuesday and ships Tues.-Thurs, orders placed between Friday-Mon will ship on Tuesday. All other orders ship the same day if received before 11 am EST.
Tartufo Nero di Bagnoli (Bagnoli Truffle)
Correctly identified as Tuber Mesentericum Vitt. (that’s not a fullstop) they have been prized for centuries in their natural home of the Monti Picentini with its black pines and impressive beech (faggio) woods.
The Vitt. refers to naturalist Carlo Vittadini who first classified this black truffle in the early 1800s.
This is the mountain community of Terminio-Cervialto and right in the heart of Irpinia, a territory which is also crossed by three rivers: the Sele, Calore and Fredane.
To get your bearings, as well as Bagnoli Irpino and Montella, Taurasi of wine fame also is one of the 21 comuni. (Buy Bagnoli Truffle Now)
The truffles have a strong and characteristic odour which can best be described as ‘penetrating’ (which doesn’t quite translate correctly in English).
They are also known locally as ‘winter black truffles‘ as well as ‘trifola nera’ and were appreciated by King Vittorio Emanuele III who was presented with a 800g specimen in 1924.
Around 15,000 kg of them are dug up each season with the final weekend of Autumn being the traditional date for the annual truffle festival.
The mild bitter tase of the truffle should be enjoyed raw, shaved into fine slices and combined as a finish with other dishes.
Local salads of extra virgin olive oil, lemon juice, sardines, olives and peperoni are given a special twist.
Also expect them as a condiment with spaghetti or tagliatelle or even a take home ‘ricotta al tartufo’. We also like the sound of the ‘trout of the River Sele with black truffle sauce’.
If you follow the Sele Valley up river you will eventually reach the locality of Colliano, a place known for ‘tartufo nero di Bagnoli’ from the woods of Monte Marzano.
